Pretzel buns are designed for sweet or savoury sandwiches, while the mini-baguette can be covered in cheese or split for a fresh filling. The business grew from founder Torsten Krause’s memories of fresh pretzels in southern Germany, including the Black Forest village where he grew up. The baking approach is deliberately hands-on, with the dough carefully proofed and each product shaped by hand. The business says it uses mostly locally sourced Australian ingredients, including flour, water, yeast, yeast nutrient, dairy and salt, with organic and locally produced components used where feasible.

For local customers, website orders can be collected from the Mullumbimby kitchen on Wednesday mornings or delivered within the Byron Shire on Thursday or Friday mornings. Fresh products are also listed at Bay Grocer in Byron Bay and IGA Mullumbimby on Thursdays, with frozen ten-packs available at Byron IGA and Suffolk Spar while stock lasts, and fresh pretzels at Tyagarah Shell station daily while stock lasts. Byron Bay Pretzels also appears at Bangalow Market on the fourth Sunday of each month.
