Lord Byron Distillery is a family-owned distillery making spirits in Byron Bay, with its site listed at 4 Banksia Drive in the Byron Bay Arts & Industrial Park. The distillery produces a range of spirits including pure single rum, spiced rum, cane spirits, gin, falernum, rum tawny and limoncello. Its rum range is a particular focus. The Pure Single Rum series is made from local molasses, double pot distilled and matured in oak casks, with releases including the Ex-Red Wine Cask and Ex-Bourbon Cask expressions. The distillery also offers Hinterland Gin, Lighthouse Gin and 12 Year Old Spiced Rum. Its cocktail recipes provide another way to explore the range, with classics and house serves featuring products such as Kokomo and Silver Cane.
Provenance is central to the business. Lord Byron Distillery says its drinks are made from ingredients grown or sourced in the Northern Rivers, including water from the family farm in the Byron Bay hinterland and molasses from local cane growers. The team ferments, distils, matures and bottles the spirits on site. Botanicals are sourced from local growers where possible, while some ingredients, including yeast and juniper, come from outside Byron Shire. The result is a production story visitors can follow from regional raw materials through to the bottled spirit.
Founders Brian and Helen Restall established the distillery after their shared interest in spirits and Brian’s experience with a local renewable-energy generator and the region’s sugar industry. Their approach combines small-batch production with a strong sustainability focus: both the family farm and distillery are powered by 100% renewable energy, and distillery co-products are converted into liquid fertilisers and cattle-feed additives. With tastings, tours and hands-on classes available, the venue suits solo visitors, couples and small groups looking for a more informative Byron Bay experience. Alcohol is for people aged 18 and over.
